Which hospitality jobs pay the most?

Operations, revenue management, accommodation and culinary leadership: the best-paid hospitality roles and the factors that shape their salaries.

Three hospitality professionals meeting in a hotel lobby

The best-paid hospitality jobs are generally found in operations leadership, commercial strategy and roles with direct responsibility for a property’s performance. Regional operations directors, revenue managers, commercial directors, accommodation directors and executive chefs are among the highest-paid roles in published salary guides. The actual package still depends on scope, experience, location and variable pay.

In brief:

  • Leadership and performance roles command the highest fixed salaries.
  • Experienced revenue and commercial leaders can reach the same level as operations directors.
  • The job title is not enough: property size, number of sites, team, budget and variable pay all change the package.

The highest-paid leadership roles

The hospitality, catering and tourism salary guide published through Onisep places regional operations leadership at the top of the hotel roles it covers. It gives a fixed annual gross salary of €50,000 to €55,000 for 0 to 2 years in the role, rising above €65,000 after 10 to 15 years.

Hotel directors, accommodation directors, food and beverage directors and commercial directors follow the same pattern: remuneration rises with scope and experience. For general management, our guide to hotel director salaries in France explains the differences by property category and location.

These figures are market reference points for fixed annual gross pay, not promises. A director of a small independent hotel and a regional director covering several properties may belong to the same professional family while carrying very different responsibilities.

Revenue management and commercial roles

Roles that directly influence turnover can also command high salaries. In the same guide, a yield or revenue manager moves from €36,000 to €40,000 early in the role to more than €60,000 after 10 to 15 years. Commercial and marketing directors rise above €55,000 at the same experience level.

This progression reflects responsibility for pricing, distribution, customer mix and commercial development. In a hotel group or multi-property portfolio, scope can matter more than the category displayed on the building.

Culinary and food and beverage leadership

At properties operating several restaurants and bars, executive chef and food and beverage leadership roles combine management, organisation and financial responsibility. The guide published through Onisep places an executive chef between €55,000 and €60,000 in fixed annual gross pay at 0 to 2 years in the role, rising above €70,000 after 10 to 15 years.

An executive chef supervising several brigades should not be compared directly with a head chef in a smaller operation. Covers, opening hours, seasonality and management scope all change the role.

What actually changes a hospitality salary

Compare the same elements before judging two offers:

  • fixed annual gross pay, variable pay and benefits;
  • property category, capacity and number of sites;
  • team size and management responsibility;
  • location, mobility and working pattern;
  • budget and commercial responsibility;
  • experience in a genuinely comparable environment.

The sector is highly diverse. Onisep’s overview of hospitality and catering careers shows how widely working environments and business models vary. A national average cannot replace a careful reading of the actual role.

Frequently asked questions

Which hospitality job pays the most?

There is no single winner in every property. Regional operations and multi-property executive roles usually sit at the top of salary guides. An experienced executive chef, revenue manager or commercial director can still earn more than a hotel director whose scope is more limited.

Do you need to work in a palace hotel to earn a high salary?

No. Property category matters, but the number of sites, team size, revenue responsibility and location may carry more weight. A regional or group role can offer a larger package than a role at a prestigious but smaller property.
